Fried Chicken
 
Ingredients
  • chicken: i like bone-in skin-on and an assortment of pieces
  • buttermilk (coconut milk works great here too!)
  • flour
  • cornmeal
  • salt
  • vegetable oil for frying
Instructions
  1. Soak the chicken in buttermilk a few hours or overnight.
  2. Combine the flour, cornmeal and some salt and dredge the chicken pieces, making sure to coat them fully.
  3. Preheat your oven to 350˚F and heat oil in a large, wide-rimmed pot to 350˚F. Have a baking sheet with inset wire rack ready for the finished pieces.
  4. Fry the chicken in batches until the outside is golden brown. Remove them from the oil, sprinkle with salt and place them on the baking sheet. Put in the oven to keep warm while you fry the remaining chicken.
