Smokey White Bean & Sage Dip
- ½ cup olive oil
- ¼ cup sage leaves
- 3 cups cooked white beans (from 1 cup dried)
- juice of 1 lemon
- ½ tsp smoked paprika
- ½ tsp cayenne
- salt and pepper
- Heat olive oil in a small sauce pan, add the sage and let fry until crispy and fragrant, 2-3 minutes.
- Combine everything in a food processor and puree.
- Season with salt and pepper - it will need a fair amount but add gradually and taste as you go.
